Ingredients:
1 cup peanut butter (creamy or crunchy)
1 egg
1 cup sugar (plus extra to sprinkle on top)
1 teaspoon vanilla (optional)
Mix ingredients together and form into balls. Crisscross with a fork and sprinkle with sugar. Bake at 350 for 12 minutes.
These cookies are simple to make with ingredients always on hand and your kids will love them. They are gluten-free too!

These cookies are so good as is but if you are feeling frisky instead of 1 cup sugar add 1/2 cup of brown sugar and 1/2 sugar for a little extra crispiness along with two ghirardelli chocolate chips to each cookie.
